garlic roasted potatoes

This side dish is so yummy! I could eat it all by myself! 


heat oven to 400*
you will need:
3 pounds small red or white skinned potatoes
1/4  cup olive oil
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley


cut potatoes in half and place in bowl with oil, salt, pepper, and garlic.(toss until potatoes are well coated)
Dump potatoes onto baking sheet and spread all around. Roast in the oven for at least one hour. Flip twice with a spatula during cooking to ensure even browning. Remove potatoes from oven and toss with minced parsley.
